In 2021, the establishment of an International School in the village of Golyama Zhelyazna attracted the attention of one of the world's leading culinary academies – FERRANDI Paris – with its ambition, quality, and strong focus on cultural heritage. We are proud that an institution with more than 100 years of history, an established reputation and outstanding achievements became an official partner of Sharena Fabrika Culinary School. Since then, the foundations of our educational programs have been built, modeled after the globally recognized programs of FERRANDI Paris and savoir-faire in French cuisine.

The partnership with FERRANDI Paris builds on our vision of preserving and promoting the distinctive characteristics of Balkan cuisine through established culinary education practices and the introduction of French techniques. These already solid foundations enable traditions to be carried into the future, while building a healthy culinary environment for both people and nature. In this context, cultural identity, clean food, health, and diversity are being reimagined, and Balkan culinary traditions are finding their way onto the global culinary scene.

From root to table

Located at the foot of the Central Balkan National Park and near the Sopot Dam, the Culinary School "Sharena Fabrika" is surrounded by beautiful nature and fertile land in a region rich in history and traditions. The authentic cuisine, crafts and diverse nature in the surrounding area shape the cultural identity of the locals and distinguish the Troyan region as a place with a deep connection to the past and traditions, preserving the authentic taste of the garden, forest and farm and with recipes passed down through generations. The foundation of the school today is the idea of ​​telling the history of this region and being part of the new one, by encouraging the preservation and development of its roots.
