in partnership with FERRANDI Paris

Duration: 1 Semester (19 weeks, 820 hours)
Participants:                10 people
Working language:           English

An intensive 19-week program for anyone who wants to receive professional training at an exceptionally high level, while simultaneously exploring the culinary worlds of French and Balkan cuisine.

Module "French Cuisine" will lay a solid foundation for developing your culinary talent. Through it, you will master knife skills, learn to prepare stocks and sauces, and work with vegetables, fish, meat, and other key techniques. With the guidance of our experienced chef instructors, you will discover the culture and methods of working in a professional kitchen.

Module “Balkan Cuisine” was developed in collaboration with established chefs from Bulgaria, Greece, Serbia, and Turkey to offer authentic flavors from each of these countries. Through it, you will explore the connection between French techniques and Balkan authenticity as you prepare traditional stews, seasonal vegetable dishes, various grilled meats, breads, and creative fusion menus.

The hands-on sessions in this intensive 820-hour program are complemented by a variety of theoretical modules, with an emphasis on entrepreneurship and the fundamentals of the restaurant business — supply management, kitchen organization, menu planning, and more. Additional attention is given to culinary photography and social media presence.

Graduates of the program are not just chefs certified with a prestigious European diploma — they are culinary visionaries who will shape the future of gastronomy.
