An intensive 16-week professional program, suitable for both amateur and experienced pastry chefs. Combining hands-on training and theoretical foundations, it elevates participants' skills to an exceptionally high level, empowering them to confidently craft a wide range of pastries from the world of classic and contemporary French pastry.
From classic éclairs to melt-in-your-mouth chocolate bonbons, from tender brioche to perfectly crafted macarons — these are just a few of the French classics you will master in our professional program French Pastry.
Every recipe is an opportunity to develop precision, creativity and consistency. Whether you're piping delicate eclairs, laminating layers of puff pastry or tempering chocolate to a perfect shine, our chef instructors will guide you in mastering the professional techniques you need.
The hands-on sessions are complemented by modules on entrepreneurship, kitchen organization, food safety, culinary photography, marketing and sales. At 660 hours, the program gives you the knowledge and skills to work in a professional kitchen or launch your own pastry business.
Days in the training kitchen follow a clear rhythm — demonstrations, hands-on practice with individual guidance and instructor feedback, and tasting of the finished products.
Upon completing the program, you will not only be able to prepare given recipes, but also think and act like a professional pastry chef — from organizing time and tasks, through planning and managing inventory and production, to artistically presenting and selling the finished products.

A two-week, hands-on program for anyone who wants to learn to prepare some of the most iconic classic French desserts and discover the techniques used by professional pastry chefs.
Our experienced instructors will help you take your first steps in the world of French pastry.
You will explore key techniques and try classic recipes — learning to prepare different types of dough and creams, work with professional tools, and assemble and decorate a variety of desserts.
Each training day includes demonstrations, hands-on practice with individual guidance and instructor feedback, and tasting of the finished products.
